Shambhar Recipe

Shambhar is a traditional South Indian lentil-based stew, rich in spices and flavors. It is commonly served with rice, idli, dosa, or vada. Here is a simple recipe to make delicious Shambhar at home.

  1. Wash and pressure cook toor dal until soft. Mash it and set aside.
  2. In a large pot, heat oil. Add mustard seeds, cumin seeds, fenugreek seeds, asafoetida, and curry leaves. Let them splutter.
  3. Add chopped onions and green chilies. Saute until onions turn translucent.
  4. Add diced vegetables (eggplant, drumstick, carrot) and sauté for a few minutes.
  5. Now, add chopped tomatoes and cook until they become soft.
  6. Add tamarind pulp, sambar powder, turmeric powder, and salt. Mix well.
  7. Pour in the mashed dal and bring the mixture to a boil. Adjust consistency by adding water if needed.
  8. Simmer for 15-20 minutes until the vegetables are cooked and the flavors are well combined.
  9. Garnish with fresh coriander leaves.
  10. Your delicious Shambhar is ready to be served. Enjoy it with rice or your favorite South Indian dish!
