Shambhar Recipe
Shambhar is a traditional South Indian lentil-based stew, rich in spices and flavors. It is commonly served with rice, idli, dosa, or vada. Here is a simple recipe to make delicious Shambhar at home.
Ingredients:
- 1 cup toor dal (split pigeon peas)
- 1 small eggplant, diced
- 1 drumstick, cut into pieces
- 1 carrot, diced
- 1 tomato, chopped
- 1 onion, finely chopped
- 2-3 green chilies, slit
- 1 tablespoon tamarind pulp
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon fenugreek seeds
- A pinch of asafoetida (hing)
- 1 sprig curry leaves
- 2 tablespoons sambar powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnishing
Instructions:
- Wash and pressure cook toor dal until soft. Mash it and set aside.
- In a large pot, heat oil. Add mustard seeds, cumin seeds, fenugreek seeds, asafoetida, and curry leaves. Let them splutter.
- Add chopped onions and green chilies. Saute until onions turn translucent.
- Add diced vegetables (eggplant, drumstick, carrot) and sauté for a few minutes.
- Now, add chopped tomatoes and cook until they become soft.
- Add tamarind pulp, sambar powder, turmeric powder, and salt. Mix well.
- Pour in the mashed dal and bring the mixture to a boil. Adjust consistency by adding water if needed.
- Simmer for 15-20 minutes until the vegetables are cooked and the flavors are well combined.
- Garnish with fresh coriander leaves.
- Your delicious Shambhar is ready to be served. Enjoy it with rice or your favorite South Indian dish!
